Koval Single Barrel Bourbon is a unique organic bourbon from Chicago's first distillery since the mid-1800s, distinguished by its unusual mash bill of 51% corn and 49% millet. This non-traditional grain combination, along with maturation in new, charred American oak barrels, contributes to its smooth, well-balanced, and flavorful profile. The whiskey offers a harmonious blend of sweet vanilla and caramel notes, complemented by hints of oak spice and fruit. It's bottled at 47% ABV and is known for its single barrel, small-batch, and unfiltered nature.

Note: A very small quantity of whiskies came from this single barrel, so taste variability is higher than with larger production whiskies. Many times this is not a big deal (i.e. Blanton's), but sometimes it matters (i.e. Larceny Barrel Proof versions). Nose: Sweet vanilla, toasted nuts, and a touch of char smoke are common. Some also note the presence of tropical fruit and a hint of ethanol.
Palate: The taste often includes mango chutney, vanilla, apricot custard, and caramel. The millet contributes a soft, whisper of vanilla and a unique chalkiness.
Finish: A peppery caramel finish is typical, with a lingering warmth and complexity. Some find a wisp of clove-spiked tobacco on the finish.
