Devil's Cut Bourbon image
Jim Beam Devil's Cut Bourbon
After the barrels are emptied, a small portion of the liquid remains trapped inside. This "Devil's Cut", as the folks at Jim Beam call it, is extracted using a proprietary process, then blended with 6-year-old Kentucky straight bourbon and bottled at 90 proof, creating Jim Beam Devil's Cut Whiskey. It's an intensely oaky, deep, and complex spirit with an extra layer of richness and robust flavor.

Note: A very small quantity of whiskies came from this single barrel, so taste variability is higher than with larger production whiskies. Many times this is not a big deal (i.e. Blanton's), but sometimes it matters (i.e. Larceny Barrel Proof versions). If the specific barrel is not listed, ask your server or a store employee for more info.
Tasting Notes
Nose: Rich vanilla and caramel are balanced by toasted oak and baking spices, with subtle hints of fruity notes like cherry or orange peel.
Palate: A full-bodied and smooth mouthfeel delivers flavors of sweet butterscotch and dark fruit, with a robust backbone of charred oak, cinnamon, and rye spice.
Finish: Long, warming, and pleasantly oily, the finish lingers with notes of caramel, lingering spice, dry oak, and a touch of roasted nuts.
