The Macallan Rare Cask
Crafted to showcase complexity and depth, Rare Cask is drawn from the broadest spectrum of casks used in maturation on The Macallan Estate. Hand-picked by our whisky making team, the combination of sherry seasoned American and European oak casks - a high proportion of them first fill - deliver an exquisite and unmistakably woody whisky with a rich hue. Incomparable access to the most extensive range of cooperages in Spain gives us some of the finest and scarcest casks to choose from to create Rare Cask, which results in a diversity in the finished whisky unlike other Macallan expression. It is the role of the whisky making team to get to know each and every cask in detail, from how it interacts with the spirit to the spectrum of colours it imparts. This relationship between cask and craftsman, spirit and skill, ultimately give us Rare Cask.

Tasting Notes
Nose: Soft notes of opulent vanilla and raisin give way to a sweet ensemble of apple, lemon, and orange. All balanced by a spicy quartet of root ginger, cinnamon, nutmeg and clove.
Palate: This spicy quartet are unwavering. Oak resonates, timeless, polished and rich. Vanilla and chocolate lead the finale along with a light citrus zest.
Finish: Warming and woody.
Jim Beam Old Grand-Dad 80 Proof
Basil Hayden Sr. - known as Old Grand-Dad to the generations that followed - made bourbon the way he wanted. He went against the traditional “grain” of the time and chose to distill his bourbon with a higher percentage of rye. This way of crafting bourbon was likely something he handed down to his son. And in turn, his grandson. That was Colonel R.B. Hayden who would justly name his bourbon after his Old Grand-Dad. The recipe today remains inspired by Basil's original with complex flavors and an unmistakable spiciness. First bottled in 1882, very little has changed about it. And that's the only way we'd have it.

Tasting Notes
Nose: Light cinnamon accompanied by vanilla, caramel, and a trace of baking spices are evident, but discreet.
Palate: Baking spices and a touch of cinnamon coalesce, forming a spicy base. A familiar caramel note offers a contrasting sweetness, accompanied by light apple.
Finish: As the baking spice and cinnamon dissipate, a sweet brown sugar flavor develops. The sweetness is accented by traces of apricot and oak, which quickly dissipate back to a lingering light spice.
