Little Book Chapter 7, “In Retrospect,” is the seventh chapter in the Little Book Whiskey series. “In Retrospect” offers any curious whiskey drinker a chance to explore where American Whiskey can go by looking back to where it's been. Now, with six chapters written, the seventh chapter of Little Book pushes the story ahead, building on what's come before in ways not yet seen. Little Book Chapter 7 is a blend of seven different liquid streams, blending one liquid from each of the previous chapters, then adding a record seventh. “In Retrospect” is a nod to the past but also sets the course for what's next, not only for Little Book, but Freddie's continued journey as Eighth Generation Master Distiller of the Fred B. Noe Distillery. Tasting Notes
Nose: Subtle sweetness with notes of clove spice.
Palate: Slightly floral with light smoke and sweet vanilla.
Finish: The long finish is filled with caramel.
Kentucky Peerless Distilling Co. Single Barrel Bourbon
Due to the careful distilling process, Peerless spirits are multi-dimensional in terms of flavor. Single Barrel selections allow for concentration on a particular barrel's unique characteristics. Master Distiller, Caleb Kilburn, carefully hand selects barrels that highlight distinctive natural profiles to be offered in the Peerless private Single Barrel selection. Whiskey profiles of Peerless caliber selections are compared one by one. Once a barrel is chosen, it is bottled and prepared exclusively and given a unique label. Each barrel typically yields 180-210 bottles. As always, Peerless spirits are bottled at barrel proof, so Peerless patrons experience the same robust characteristics that were chosen specially for them.

Note: A very small quantity of whiskies came from this single barrel, so taste variability is higher than with larger production whiskies. Many times this is not a big deal (i.e. Blanton's), but sometimes it matters (i.e. Larceny Barrel Proof versions). Tasting Notes
Nose: The nose is filled with depth and spice, melding with blackberry and other cooked dark fruit notes.
Palate: On the palate, rice pudding, vanilla cream, rich dark chocolate, and blueberry pie are laced with savory spice. The mouthfeel is smooth and creamy, with little hint of the high proof.
Finish: The finish is deep, jammy, and long, with loads of spice.
